The summer brings an abundance of them, and they’re typically easy to grow. Our garden in North Carolina has overflowed with all sorts of pepper varieties and oftentimes the market or grocery sales will as well.
Instead of letting peppers rot because there weren’t enough minutes or meals in the day to use them, consider dicing them up then freezing them. When a recipe calls for peppers, especially hot peppers, it’s easy to pull them out, already diced, and add them to whatever yummy recipe is on the books for dinner. They are often cheaper than canned versions as well.
The next time you see peppers on sale or have an abundance growing in your garden, remember the freezer.
