The busy season of school, fall sports, and the likes is upon us. Who doesn’t like a quick, easy, and healthy recipe during this time? The crock pot is key, and is your practical tip for today. It saves time, is cheaper than eating out, and it’s ready (hopefully!) when you are.
Repeat after me: My crock pot is my friend. It just might be beneficial to spend much time with your new friend.
Here are a few ways:
* Throw in a roast along with veggies such as carrots, celery, potatoes, and onions. Mix in a few herbs of choice, fresh or dried, and you’ll soon be eating a yummy meal.
* Chicken breasts covered with salsa, corn, and black beans makes an easy dinner. (Sometimes we add fresh mushrooms, pictured above.) Pair it with something green, like a salad, and you’re good to go.
* Potatoes, poked a few times, and rubbed with olive oil and salt, then wrapped in foil and cooked in the crock pot make for a flavorful side.
* Beans, of any sort, work well with the recipe here. Left whole or whirled into a paste, they’re great! We make a few changes, adding less salt and water as well as adding a couple of tablespoons of olive oil. We’ve used white, red, and black dried beans and love them all.
